We just recently purchased an all matching numbers 1968 Camaro and would like someone to explain why the suffix numbers on the 396 325HP read differently from the numbers recorded on the Protect-O-Plate?

The Camaro was built the 4th. week of January 1968 - (January 22nd. to January 26th.)

The numbers on the Protect-O-Plate read T1205MY (December 5th.) whereas the Engine numbers read T0205MY (February 5th.).

The partial VIN on the Engine matches the VIN and so does the partial VIN appear on the TH 400.

Would anyone know the reason why?

Mistakes were made, on occasion, but I think people would want to verify stamps to rule out someone re stamping block.  Can you get a picture of block stamp and POP to post?

Yeah, it's simple. The ONE is next to the ZERO on the imprinter. Wha-da-ya-know, a GM employee made a mistake. There were many and this is a perfect example of what I live by with these old cars: The only thing that was consistent was inconsistency.

Casting date would offer a little more info. The casting number not much.
PM the stampings to Kurt S or others than can give you good info if not comfortable posting it.
