Best way to break-in a fresh rebuilt 302

I've just received my engine from the builder. I'm a steel fabricator so I was able to fabricate a engine stand and mount my engine to it. I plan to crank it up and break-in my cam on the stand.
My question is [what oil to use] [how long to run engine] [what rpm]
I would like to here your opinions.

Put whatever oil you like best in it, drive it for 500 miles at varying speeds to seat the rings and change the oil after 500 miles, done.

Always best to put a new engnie on a dyno if you can afford it. This way it's broken in, if there are any issues, they can be fixed before the engine goes in the car. Oil leaks, camshaft break in, etc.

The consensus is to use Rotella (Shell) or Delo (Chevron) diesel oil. You can buy it in 10W30 if 15W40 is too heavy for you liking.
