Just a WAG, but here goes:
4k for interior, glass and misc.
2k for exterior trim, emblems, etc.
15k for prep and paint. That cost is dependent on your desired level of finish. Could be more or less.
5k for misc. such as hoses, belts, fuel/brake lines, exhaust and many other items.
Are any of the highly optioned parts missing? Add $ appropriately.
You mentioned that you have a significant stash of parts, so this should minimize some of the costs. And the more hands on you are, the more you can save.
With these dollars in mind, I think you'll be at, or above, the value of the completed car. Only you can say what your cost tolerance is.
That said, someone will take a chance and finish this car.
